Heat a large skillet over medium heat and add the minced beef, cooking until browned.
Once browned, remove the beef and set it aside. In the same skillet, add sliced onions and cook until caramelized, about 15-20 minutes.
Add the minced garlic to the skillet and cook for an additional minute until fragrant.
Sprinkle the flour over the onion mixture, stirring well to combine, and cook for another 2 minutes.
Pour in the beef stock and stir to combine, scraping up any browned bits from the bottom of the skillet.
Add Worcestershire sauce, thyme, salt, and pepper, and simmer for 10 minutes until thickened slightly.
Return the browned beef to the skillet, stir well, and let it heat through for another 5 minutes.
Serve hot, garnished with fresh parsley, alongside crusty bread or over creamy mashed potatoes.
