Ingredients
  

  • 1 medium butternut squash about 2-3 lbs
  • 3 tablespoons brown sugar
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper
  • ½ teaspoon ground cinnamon
  • 1 tablespoon fresh thyme or sage optional

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the butternut squash by peeling, seeding, and cubing it.
  3. In a large mixing bowl, combine the cubed squash with olive oil, brown sugar, salt, black pepper, and cinnamon.
  4. Line a baking sheet with parchment paper and spread out the squash cubes in a single layer.
  5. Roast the squash in the preheated oven for about 25-30 minutes.
  6. Toss the squash halfway through roasting for even cooking.
  7. Remove from the oven and sprinkle with fresh herbs (if using).
  8. Serve warm, and enjoy the delicious flavors!
