Ingredients
500g ground chicken
1/2 cup breadcrumbs
1/2 cup grated Parmesan cheese
1/4 cup milk
1 large egg
3 cloves garlic, minced
1 tsp Italian seasoning
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp onion powder
1/4 cup chopped fresh parsley
1/2 cup shredded mozzarella cheese
For the topping:
1/4 cup grated Parmesan cheese
2 tbsp melted butter
1/2 tsp garlic powder
1 tbsp chopped parsley
Instructions
Preheat the oven to 180°C (350°F) and grease a loaf pan.
In a large bowl, mix ground chicken, breadcrumbs, Parmesan cheese, milk, egg, minced garlic, Italian seasoning, salt, black pepper, onion powder, and parsley until well combined.
Transfer the mixture to the prepared loaf pan and shape it evenly.
Bake for 35-40 minutes, or until cooked through (internal temperature of 75°C/165°F).
In a small bowl, mix melted butter, Parmesan cheese, garlic powder, and parsley. Brush the mixture over the meatloaf and bake for another 5 minutes until golden.
Let the meatloaf rest for a few minutes before slicing and serving.
