Ingredients

• 1 large head of cauliflower, cut into florets

• 3 tablespoons olive oil

• 3 cloves garlic, minced

• 1/3 cup grated Parmesan cheese

• 1 teaspoon dried thyme

• Salt and pepper, to taste

• 2 tablespoons fresh parsley, chopped (optional)


Instructions

1. Preheat your oven to 400°F (200°C).

2. In a large bowl, toss cauliflower florets with olive oil, minced garlic, dried thyme, salt, and pepper. Make sure the cauliflower is evenly coated.

3. Spread the cauliflower in a single layer on a baking sheet.

4. Roast in the oven for 25-30 minutes, until the cauliflower is golden brown and tender, stirring halfway through.

5. Remove from the oven and immediately sprinkle the grated Parmesan cheese over the hot cauliflower. Toss gently to coat.

6. Garnish with fresh parsley if desired and serve hot.
