Ingredients
2 lbs bone-in, skin-on chicken thighs
1 lb baby red potatoes, halved
2 tbsp olive oil
4 cloves garlic, minced
1 tsp dried thyme
1 tsp dried basil
1 tsp dried oregano
1/2 cup freshly grated Parmesan cheese
Salt and freshly ground black pepper, to taste
2 tbsp chopped fresh parsley leaves, for garnish
Instructions
Heat olive oil in a large skillet over medium-high heat. Add chicken thighs, skin-side down, and sear both sides until golden brown, about 2-3 minutes per side. Set aside.
In a small bowl, combine garlic, thyme, basil, and oregano.
Place chicken thighs and potatoes into a slow cooker. Sprinkle with garlic-herb mixture, then season with salt and pepper.
Cover and cook on low heat for 7-8 hours or on high heat for 3-4 hours, until the chicken is tender and fully cooked through, reaching an internal temperature of 165°F.
About 30 minutes before serving, sprinkle Parmesan cheese over the chicken and potatoes. Cover and continue cooking until cheese is melted.
Garnish with fresh parsley before serving.
